A creative dish of vegetables from our farm and the ingredients from Hokuriku.
CUISINE
Surrounded by the sea, the Hokuriku region has vast plains and is rich in mountainous areas.
Geographical conditions provide abundant marine resources, mountain blessings, fresh and clean water, etc., resulting in a wide variety of food products.
Inspired by this dynamism, the chef expresses his emotions on every plate as if he were reliving the memory of the land.
Course meal
A course mainly uses vegetables from our own farm, “L'ASSIETTE”. Savour the gentle and delicate harmony of seasonal ingredients.
・Since our dishes use seasonal ingredients and vegetables from our own farm, we have little support for modification, with the exception of allergenic ingredients.

Sommelier
Daigo Fukushima
Born in Ishikawa and graduated from the faculty of biology at the University of Toyama.
After working at a legendary restaurant in Toyama, he changed his career in our restaurant.
As a sommelier, he qualified as a senior sommelier and became the first manager of the Ishikawa branch of the Japanese Sommelier Association.
He is also responsible for the development of corporate wine prodects, confitures and syrups based on the theme of combining ingredients, and soft drinks using distilled ingredients.
His knowledge and experience allow him to offer unique paring beverages.
Alcoholic pairing
A selection of wines from various countries, as well as Japanese SAKE and distilled spirits.
Non-alcoholic pairing
Original beverages made from vegetables, fruits, herbs, edible flowers, etc. from our own garden, and tea extracted from carefully selected leaves.
