Course Les Tonnelles
Available only on Fridays, Saturdays, Sundays, and public holidays: A full course meal including eight drink pairings. You may choose your pairing style—alcoholic, non-alcoholic, or a mix—according to your preference. Experience the essence of Les Tonnelles' French cuisine, woven from carefully selected seasonal ingredients from Hokuriku, fresh vegetables from our own farm, and the spirit of Mexico, the chef’s homeland.

Sommelier
Daigo Fukushima
Born in Ishikawa, he graduated from the Faculty of Biology at the University of Toyama. After working at a legendary restaurant in Toyama, he began a new career at our restaurant.
As a sommelier, he qualified as a senior sommelier and became the first manager of the Ishikawa branch of the Japanese Sommelier Association.
He is also responsible for the development of corporate wine products, confitures and syrups based on the theme of combining ingredients, and soft drinks using distilled ingredients.
His knowledge and experience allow him to offer unique beverage pairings.
